Leveille Award & Lectureship recipient The combination of food science and nutrition can be used to improve public health by identifying beneficial nutritional properties of foods and making them come to life in the form of safe, affordable, convenient and delicious products that consumers readily accept. This talk provides examples of such approaches, tells personal stories of such experiences, and warns that the escalating anti-science sentiment among consumers (and some professionals) is impeding our progress. The talk concludes with recommendations for a more productive future. |
